• Esperienza di almeno tre anni nella stessa posizione
• Conoscenza della lingua inglese
• Capacità ad assistere lo Chef de Cuisine durante la creazione dei menù e delle schede tecniche
• Capacità a rimpiazzare lo Chef de Cuisine durante la sua assenza, rispettando costi e qualità
• Capacità a gestire gli ordini e la squadra della cucina
• Capacità a formare la squadra sulle principali norme di igiene alimentare ed a farle rispettare quotidianamente
• Disponibilità a lavorare su turni, anche “spezzati”, week end e festivi
